Yixing clay comes from Jingsu Province, where it has been used to make teaware since the Song Dynasty (10th century CE). The prized feature of Yixing teaware is its porosity – the unglazed surface of the teapot absorbs flavor from the tea every time it is used, enhancing the flavor of every subsequent brew. For best flavor, many connoisseurs will steep only one type of tea in a particular Yixing teapot – usually black, oolong, or pu-erh rather than delicate green or white teas. To maintain this inner coating, it is best to avoid soaps and detergents and clean the pot only with hot water and allow to air dry.
